We also added undercabinet lights.  You can see below and to the left how they light up the beautiful granite.

You can see how much of a difference it made in this kitchen to paint the cabinets, exchanging the dark stain for white paint.  The room seemed much lighter just with that difference.  We replaced the formica countertops with granite, as well, and took out the light box you see below, along with the dropped ceiling.  Raising the ceiling up and adding recessed can lights changes the room entirely.
